Description

A complete meal in the slow cooker using Greek yogurt for a healthier twist.


Ingredients

Scale

2 pounds boneless, skinless chicken thighs

1 onion, diced

6 cloves garlic, minced

1 1/2 teaspoons Tajin seasoning

1 1/2 teaspoons chili powder

Kosher salt

Pepper

2 (15-ounce) cans corn kernels, drained

1 (10-ounce) can Rotel tomatoes with green chiles

1/3 cup sour cream

1 (5.3-ounce) container plain Greek yogurt

1/2 cup chopped cilantro

1/2 cup cotija cheese

Optional toppings: jalapenos, crushed Fritos or tortilla chips, hot sauce


Instructions

1. Place chicken, onion, and garlic in the slow cooker.

2. Season with Tajin, chili powder, kosher salt, and pepper.

3. Cook on low for 6 hours.

4. Add corn, Rotel tomatoes, sour cream, Greek yogurt, cilantro, and more salt and pepper.

5. Cook on low for 1 to 2 more hours, stirring occasionally.

6. Before serving, sprinkle with Tajin, cilantro, and cotija cheese.

7. Add optional toppings if desired.

Notes

Substitute Greek yogurt with blended cottage cheese or mayo if needed.

Adjust seasoning according to taste preferences.
