Deliciously chewy and golden, perfect for snacking or parties.


Ingredients

Scale

1 1/2 cups warm water

2 1/4 teaspoons instant or active dry yeast

1 tablespoon brown sugar

1 teaspoon salt

1 tablespoon unsalted butter, melted

3 3/4 to 4 cups all-purpose flour

1/2 cup baking soda

9 cups water

Coarse salt for topping


Instructions

1. Whisk water, yeast, and sugar in a bowl; let sit for 5 minutes until foamy.

2. Add salt, butter, and 3 cups flour; mix on low speed, then add remaining flour.

3. Knead dough for 5 minutes until smooth and elastic.

4. Cover dough and let rest for 10-30 minutes.

5. Preheat oven to 400°F. Line baking sheets with parchment paper.

6. Divide dough into 6 pieces; roll each into a 20-inch rope.

7. Cut ropes into 1.5-2 inch pieces.

8. Boil water and baking soda; boil pretzel bites for 10-15 seconds.

9. Place bites on baking sheets, sprinkle with coarse salt.

10. Bake for 15 minutes until golden brown.

Notes

If dough is sticky, add flour sparingly.

Store leftovers in an airtight container for up to 2 days.
