Description

A healthier take on a classic, with whole-wheat bread and low-fat cheese.


Ingredients

Scale

8 ounces whole-wheat baguette

2 garlic cloves

2 cups low-fat, low-sodium chicken broth

Salt

Crushed red pepper

1/4 cup grated Parmigiano-Reggiano cheese

3/4 cup shredded reduced-fat mozzarella

3 tablespoons chopped fresh flat-leaf parsley


Instructions

1. Preheat oven to 450°F. Line a baking sheet with foil.

2. Split baguette in half crosswise, then lengthwise to make 4 pieces. Rub each piece with garlic. Place cut side up on the baking sheet and bake for 8 minutes.

3. Remove from oven. Turn broiler on high.

4. Pour chicken broth into a bowl. Dunk each bread piece, letting it absorb liquid. Place back on the sheet, cut side up. Season with salt and crushed red pepper. Sprinkle with cheeses.

5. Broil until cheese is bubbly and browning, about 3 minutes. Sprinkle parsley over the bread, cut each piece in half, and serve.

Notes

Toasting prevents sogginess when dipped in broth.

Adjust red pepper for spice preference.
