Description
These Cheesy Corn Fritters made with fresh sweet corn, cheddar, and chives are light and fluffy cakes with amazing texture and flavor. This easy 15-minute recipe is a perfect side dish or breakfast served with some turkey bacon and eggs.
Ingredients
2 tablespoons melted butter
2 eggs
1/4 cup milk
1/2 cup flour
3/4 teaspoon baking powder
1/4 teaspoon salt
2/3 cup grated cheddar cheese
1/4 cup grated Parmesan cheese
1 cob of sweet corn, husked and kernels removed
1 tablespoon chives
Instructions
1. In a large bowl, whisk together melted butter, milk, and eggs.
2. Add flour, baking powder, and salt; mix just until combined.
3. Fold in cheddar, Parmesan, corn kernels, and chives until combined.
4. Heat a skillet over medium-high heat; add olive oil or butter.
5. Scoop 1/2 cup batter into the pan for each fritter.
6. Cook for 2-3 minutes until golden and bubbles form on top.
7. Flip and cook for another 2-3 minutes until golden brown.
8. Remove and repeat with remaining batter. Serve hot.
Notes
OPTIONAL: Add 1/2 cup cooked crumbled turkey bacon, diced sausage, or turkey bacon to the batter.
3/4 cup canned or frozen (heated) corn can be substituted for fresh corn. Ensure it’s well-drained.
