Description

Crispy salmon bites with pickled cucumbers, rice, broccoli, and avocado.


Ingredients

Scale

1/3 cup plain Greek yogurt or mayonnaise

4 tbsp sweet chili sauce

2 tsp sriracha

1 tbsp avocado oil

1 lb salmon filet, chopped into bite-sized chunks

1/2 cup coconut aminos

1 tbsp rice vinegar

2 large cloves garlic, minced

2 tsp toasted sesame oil (optional)

1 batch Asian Cucumber Salad

3 cups cooked brown rice

1 large head broccoli, chopped into florets

1 large ripe avocado, sliced


Instructions

1. Prepare cucumber salad and let sit for at least 15 minutes.

2. Cook rice according to package instructions.

3. Mix Greek yogurt, sweet chili sauce, and sriracha for bang bang sauce. Refrigerate.

4. Sauté broccoli with 1 tsp avocado oil and 1/4 cup water until tender.

5. Combine coconut aminos, rice vinegar, garlic, and sesame oil for salmon marinade.

6. Heat avocado oil in a skillet over medium-high heat.

7. Cook salmon chunks for 2-3 minutes per side. Add marinade and cook until glazed.

8. Assemble bowls with rice, cucumber salad, broccoli, avocado, and salmon. Drizzle with bang bang sauce.

Notes

Substitute coconut aminos with soy sauce and maple syrup if needed.

Store leftovers in separate containers for up to 5 days.
