Description
This Creamy Cajun Chicken Soup is loaded with tender chicken, peppers, onions, celery, and Cajun spices!
Ingredients
1 tablespoon butter or olive oil
1 tablespoon garlic, minced
1 cup onion, chopped
1 cup carrots, chopped
1 1/2 cups celery, chopped
1 1/2 cups bell pepper, chopped
1 1/2 pounds chicken breast
2 tablespoons Cajun seasoning
2 teaspoons hot sauce
1 can (14 oz) fire-roasted tomatoes, drained
3 cups chicken broth
1/4 cup heavy cream
8 ounces cream cheese, softened
Instructions
1. Heat a large pot over medium heat. Add butter or olive oil.
2. Sauté garlic, onion, celery, bell pepper, and carrots for 3-4 minutes until tender.
3. Add chicken breast to the pot. Season with Cajun seasoning and hot sauce.
4. Add fire-roasted tomatoes and chicken broth. Bring to a simmer.
5. Cover and reduce heat to medium-low. Cook for 30 minutes.
6. Remove chicken, shred, and set aside.
7. Add heavy cream and cream cheese to the pot. Whisk until melted.
8. Return shredded chicken to the pot. Stir well and serve immediately.
Notes
Adapt spice level by adjusting the hot sauce.
Use any color of bell peppers for variety.
